Can I use my Panasonic Lumix GH5 as a "webcam" / recording camera in the livestream? Because I have the Elgato CamLink but unfortunately it's a very bad product! The picture always freezes and even had a bluscreen when I used the thing, unfortunately many have these problems with it.

In order to record at 40K 60fps, you first have to be able to play the game at 4k60p. You definitely need a better PC for that.
It also takes more just to record on the settings. The minimum requirements are:
i7 6gen (=also i7 6700(K)), or ryzen 7, or similar.
For the graphics card: Nvidia Geforce GTX 10series / AMD RX VEGA.

Can I use it only on my PC without having to connect a monitor to it? I don't want to have too much load on the PC because it's already under strain from gaming. Do I really need to occupy a whole monitor for this? It would be quite practical if I could have TS, background music and other things on the same screen as the recording window.

I bought the Elgato Game Captuer 4k60 Pro last week and am thrilled.
To answer your question: occupying an entire monitor is not mandatory for the Elgato.
There is a recording software from Elgato in which you can see your console in a window. You can also use a streaming software and then display the input of your console.
