It doesn't matter in terms of image quality. You should have the full resolution with both. HDMI can also transmit sound. Displayport cannot. Displayport has sync functions, which are important for gamers. Personally, I would use HDMI for video editing. The most that can happen is that your two devices do not work well together with one or the other connection method. You'll have to try that out for

If I were you, I would use an HDMI 2.1 cable instead of this HDMI 2.0 cable.
HDMI 2.0 can transmit 4k at 60 Hz. HDMI 2.1 can transmit 8k at 60 Hz or 4K at 120 Hz.
Since the PS5 delivers a 4k signal at 120 Hz and your TV can at least handle 4k at 100 Hz, you are better off with HDMI 2.1 for now and in the future.

Hi

For ARC, the cable is perfectly adequate. However, if it is the newer eARC standard (for Dolby Atmos etc.), an HDMI 2.1 cable is required. Whether it is eARC is usually indicated on the corresponding connection of the device or in the operating instructions.
Here is a comparable HDMI 2.1 cable as an example:
Sonero Premium High Speed HDMI 2.1 8K Cable (3 m, HDMI)
